Ingredients
- Zucchini - 300 grams, grated
- Almond flour - 100 grams
- Ground beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten
Steps
- Preheat the oven to 180°C (350°F).
- Grate the zucchini and place it in a clean kitchen towel, squeezing out excess moisture.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- In a large bowl, combine the grated zucchini, cooked onion and garlic, ground beef, almond flour, cumin, paprika, salt, black pepper, chopped parsley, and beaten egg. Mix well until all ingredients are fully incorporated.
- Grease a baking dish with the remaining tablespoon of olive oil and transfer the mixture into the dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
