Ingredients

  • Bulgur wheat - 100 grams
  • Lean ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 200 ml
  • Pine nuts - 30 grams (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine bulgur wheat and water, bring to a boil, then cover and let it sit for 15 minutes until the water is absorbed. Fluff with a fork and let it cool.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  4. In a large bowl, combine the cooked bulgur, sautéed onion and garlic, ground beef, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  5. Grease a baking dish with the remaining olive oil. Spread half of the bulgur and meat mixture evenly in the dish. If using, sprinkle pine nuts on top.
  6. Layer the remaining mixture over the first layer and press down lightly to compact. Drizzle lemon juice on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  8. Remove from the oven, let it cool for a few minutes, then cut into squares and serve warm.
