Ingredients

  • Mandioquinha (or yellow sweet potato) - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 150 ml
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Peel the mandioquinha and cut it into small cubes for even cooking.
  2. In a pot, bring water to a boil and add the mandioquinha cubes. Cook for about 15-20 minutes or until tender.
  3. While the mandioquinha is cooking, heat the olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 2 minutes.
  4. Once the mandioquinha is cooked, drain it and return it to the pot.
  5. Add the sautéed garlic, vegetable broth, nutritional yeast, salt, and black pepper to the pot with the mandioquinha.
  6. Using a potato masher or hand blender, mash the mixture until smooth and creamy. Adjust the consistency by adding more vegetable broth if necessary.
  7. Taste and adjust the seasoning if needed.
  8. Serve warm, garnished with chopped fresh parsley.
