Ingredients
- Mandioquinha (or yellow sweet potato) - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 150 ml
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Peel the mandioquinha and cut it into small cubes for even cooking.
- In a pot, bring water to a boil and add the mandioquinha cubes. Cook for about 15-20 minutes or until tender.
- While the mandioquinha is cooking, heat the olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 2 minutes.
- Once the mandioquinha is cooked, drain it and return it to the pot.
- Add the sautéed garlic, vegetable broth, nutritional yeast, salt, and black pepper to the pot with the mandioquinha.
- Using a potato masher or hand blender, mash the mixture until smooth and creamy. Adjust the consistency by adding more vegetable broth if necessary.
- Taste and adjust the seasoning if needed.
- Serve warm, garnished with chopped fresh parsley.
