Ingredients

Steps

  1. Peel the sweet potatoes and cut them into evenly sized chunks.
  2. Place the sweet potato chunks in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. While the sweet potatoes are cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Drain the cooked sweet potatoes and return them to the pot.
  5. Add the sautéed garlic, almond milk, salt, and black pepper to the sweet potatoes.
