Ingredients

  • Pumpkin - 400 grams, peeled and cubed
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Coconut milk - 100 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, add the cubed pumpkin and cover with water. Bring to a boil and cook until the pumpkin is tender, about 15 minutes.
  2. While the pumpkin cooks, heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Drain the pumpkin and add it to the skillet with the sautéed onion and garlic. Stir well to combine.
  4. Pour in the coconut milk and season with salt, black pepper, and nutmeg. Mash the pumpkin mixture with a potato masher or fork until smooth and creamy.
  5. Adjust seasoning to taste and cook for an additional 2-3 minutes over low heat, stirring occasionally.
  6. Serve warm, garnished with chopped parsley.
