- Pumpkin - 400 grams, peeled and cubed
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Coconut milk - 100 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large pot, add the cubed pumpkin and cover with water. Bring to a boil and cook until the pumpkin is tender, about 15 minutes.
- While the pumpkin cooks, heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Drain the pumpkin and add it to the skillet with the sautéed onion and garlic. Stir well to combine.
- Pour in the coconut milk and season with salt, black pepper, and nutmeg. Mash the pumpkin mixture with a potato masher or fork until smooth and creamy.
- Adjust seasoning to taste and cook for an additional 2-3 minutes over low heat, stirring occasionally.
- Serve warm, garnished with chopped parsley.
