Ingredients
- Pumpkin - 400 grams, peeled and cubed
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - 1/4 teaspoon
- Coconut milk - 100 ml
- Fresh parsley - for garnish
Steps
- In a pot, bring water to a boil and add the cubed pumpkin. Cook for about 15 minutes or until tender.
- While the pumpkin is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Once the pumpkin is cooked, drain it and add it to the skillet with the sautéed onion and garlic.
- Add salt, black pepper, and nutmeg to the skillet. Mix well and cook for an additional 5 minutes.
- Pour in the coconut milk and mash the pumpkin mixture with a potato masher or fork until smooth and creamy.
- Serve warm, garnished with fresh parsley.
