Ingredients

  • Pumpkin - 400 grams, peeled and cubed
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Coconut milk - 100 ml
  • Fresh parsley - for garnish

Steps

  1. In a pot, bring water to a boil and add the cubed pumpkin. Cook for about 15 minutes or until tender.
  2. While the pumpkin is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Once the pumpkin is cooked, drain it and add it to the skillet with the sautéed onion and garlic.
  4. Add salt, black pepper, and nutmeg to the skillet. Mix well and cook for an additional 5 minutes.
  5. Pour in the coconut milk and mash the pumpkin mixture with a potato masher or fork until smooth and creamy.
  6. Serve warm, garnished with fresh parsley.
