Ingredients

  • Coconut milk - 400 ml
  • Agar-agar powder - 1 teaspoon
  • Brown sugar - 60 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Coconut sugar (for caramel) - 30 grams
  • Water (for caramel) - 2 tablespoons

Steps

  1. In a small saucepan, combine 2 tablespoons of water with 30 grams of coconut sugar over medium heat. Stir until it melts and forms a caramel.
  2. Once the caramel is ready, quickly pour it into the bottom of two small ramekins, swirling to coat the bottom evenly. Set aside to cool and harden.
  3. In another saucepan, combine 400 ml of coconut milk, 1 teaspoon of agar-agar powder, 60 grams of brown sugar, 1 teaspoon of vanilla extract, and a pinch of salt.
  4. Bring the mixture to a gentle boil over medium heat, stirring frequently. Once boiling, reduce the heat and let it simmer for about 5 minutes.
  5. Remove from heat and pour the coconut mixture evenly into the prepared ramekins over the hardened caramel.
  6. Allow the pudim to cool to room temperature, then refrigerate for at least 2 hours or until set.
  7. To serve, carefully run a knife around the edges of the ramekins and invert onto plates.
