Ingredients
- Coconut milk - 400 ml
- Agar-agar powder - 1 teaspoon
- Brown sugar - 60 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Coconut sugar (for caramel) - 30 grams
- Water (for caramel) - 2 tablespoons
Steps
- In a small saucepan, combine 2 tablespoons of water with 30 grams of coconut sugar over medium heat. Stir until it melts and forms a caramel.
- Once the caramel is ready, quickly pour it into the bottom of two small ramekins, swirling to coat the bottom evenly. Set aside to cool and harden.
- In another saucepan, combine 400 ml of coconut milk, 1 teaspoon of agar-agar powder, 60 grams of brown sugar, 1 teaspoon of vanilla extract, and a pinch of salt.
- Bring the mixture to a gentle boil over medium heat, stirring frequently. Once boiling, reduce the heat and let it simmer for about 5 minutes.
- Remove from heat and pour the coconut mixture evenly into the prepared ramekins over the hardened caramel.
- Allow the pudim to cool to room temperature, then refrigerate for at least 2 hours or until set.
- To serve, carefully run a knife around the edges of the ramekins and invert onto plates.
