- Tapioca pearls - 50 grams
- Coconut milk - 200 milliliters
- Honey or maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Pinch of salt - 1
- Cinnamon powder - 1/2 teaspoon
- Fresh mango, diced - 50 grams (for topping)
Steps
- In a bowl, soak the tapioca pearls in water for about 15 minutes, then drain.
- In a saucepan, combine the coconut milk, honey (or maple syrup), vanilla extract, salt, and cinnamon. Heat over medium heat until warm, but not boiling.
- Add the soaked tapioca pearls to the saucepan and stir well. Continue to cook over low heat for about 15 minutes, stirring occasionally, until the tapioca pearls become translucent and the mixture thickens.
- Remove the saucepan from heat and let it cool slightly. The pudding will continue to thicken as it cools.
- Serve the pudding in bowls, topped with diced fresh mango.
