Ingredients

  • Ricotta cheese - 100 grams
  • Greek yogurt - 100 grams
  • Eggs - 2 large
  • Honey - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Olive oil - for greasing the mold

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the ricotta cheese, Greek yogurt, eggs, honey, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  3. Grease a small pudding mold or individual ramekins with olive oil.
  4. Pour the cheese mixture into the prepared mold and smooth the top with a spatula.
  5. Place the mold in a baking dish and fill the dish with boiling water until it reaches halfway up the sides of the mold.
  6. Bake in the preheated oven for about 30 minutes, or until the pudding is set and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let it cool at room temperature for 10 minutes before refrigerating for at least 1 hour.
  8. Serve chilled, optionally garnished with a drizzle of honey.
