- Ricotta cheese - 100 grams
- Greek yogurt - 100 grams
- Eggs - 2 large
- Honey - 2 tablespoons
- Cornstarch - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Olive oil - for greasing the mold
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the ricotta cheese, Greek yogurt, eggs, honey, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
- Grease a small pudding mold or individual ramekins with olive oil.
- Pour the cheese mixture into the prepared mold and smooth the top with a spatula.
- Place the mold in a baking dish and fill the dish with boiling water until it reaches halfway up the sides of the mold.
- Bake in the preheated oven for about 30 minutes, or until the pudding is set and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool at room temperature for 10 minutes before refrigerating for at least 1 hour.
- Serve chilled, optionally garnished with a drizzle of honey.
