Ingredients

  • Coconut milk - 400 ml
  • Almond milk - 100 ml
  • Agar-agar powder - 10 g
  • Brown sugar - 100 g
  • Vanilla extract - 1 tsp
  • Pinch of salt - 1
  • Coconut sugar (for caramel) - 50 g
  • Water (for caramel) - 2 tbsp

Steps

  1. In a small saucepan, combine the coconut sugar and water over medium heat, stirring until the sugar dissolves. Let it simmer until it turns golden brown, then quickly pour it into the bottom of a 500 ml pudding mold and set aside.
  2. In another saucepan, mix the coconut milk, almond milk, agar-agar powder, brown sugar, vanilla extract, and a pinch of salt. Stir well and bring to a gentle boil over medium heat.
  3. Once boiling, reduce the heat and simmer for about 5 minutes, stirring continuously to ensure the agar-agar dissolves completely.
  4. Remove the mixture from heat and allow it to cool slightly for about 10 minutes.
  5. Pour the mixture carefully over the set caramel in the pudding mold, then cover it with plastic wrap.
  6. Refrigerate for at least 4 hours or until fully set.
  7. To serve, carefully run a knife around the edges of the mold, then invert it onto a plate. Enjoy your vegan pudim!
