Steps

  1. In a medium saucepan, combine the coconut milk, agave syrup, cornstarch, vanilla extract, and a pinch of salt.
  2. Whisk the mixture well to ensure there are no lumps of cornstarch.
  3. Place the saucepan over medium heat and cook while continuously stirring until the mixture thickens, about 10-15 minutes.
  4. Once thickened, remove from heat and pour the mixture into two small ramekins or dessert cups.
  5. Let the puddings cool to room temperature before transferring them to the refrigerator to chill for at least 2 hours.
