  • Coconut milk - 100 ml
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Erythritol - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the sugar-free sweetened condensed milk, coconut milk, eggs, vanilla extract, erythritol, baking powder, and a pinch of salt.
  3. Blend the mixture using a hand mixer or blender until smooth and well combined.
  4. Pour the mixture into a lightly greased 500 ml baking dish or ramekins.
  5. Prepare a water bath by placing the baking dish in a larger baking pan filled with hot water, ensuring the water reaches halfway up the sides of the dish.
  6. Bake in the preheated oven for about 50 minutes, or until the pudim is set and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let it cool to room temperature before refrigerating for at least 2 hours.
