- Sweetened condensed milk - 200 grams
- Whole milk - 100 ml
- Eggs - 2 large
- Vanilla extract - 1 teaspoon
- Gelatin powder - 5 grams
- Water - 30 ml (for gelatin)
- Protein powder (vanilla or unflavored) - 30 grams
- Brown sugar - 50 grams (for caramel)
Steps
- In a small bowl, sprinkle the gelatin over 30 ml of water and let it bloom for about 5 minutes.
- In a saucepan over low heat, dissolve the brown sugar with a little water to create a caramel. Once melted and golden, pour it into a round mold, swirling to coat the bottom.
- In a blender, combine the sweetened condensed milk, whole milk, eggs, vanilla extract, and protein powder. Blend until smooth and fully incorporated.
- Gently heat the bloomed gelatin until fully dissolved, then add it to the blender mixture and blend for another 30 seconds.
- Pour the mixture into the caramel-coated mold and cover with plastic wrap.
- Refrigerate for at least 4 hours or until set. Once set, carefully invert the mold onto a serving plate to release the pudim.
