Ingredients
- Raspberry puree - 100 grams
- Coconut milk - 200 ml
- Honey or agave syrup - 2 tablespoons
- Agar-agar powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Pinch of salt - 1
Steps
- In a small saucepan, combine the coconut milk, honey or agave syrup, and a pinch of salt. Heat over medium heat until warm, but not boiling.
- Sprinkle the agar-agar powder over the warm mixture and whisk continuously until fully dissolved, about 2-3 minutes.
- Remove the saucepan from heat and add the raspberry puree and vanilla extract. Mix well until fully combined.
- Pour the mixture into two small ramekins or dessert cups. Allow to cool at room temperature for about 10 minutes.
- Once cooled, transfer the ramekins to the refrigerator and let them set for at least 20 minutes.
- Serve chilled, optionally garnished with fresh raspberries or a drizzle of honey.
