Ingredients

  • Raspberry puree - 100 grams
  • Coconut milk - 200 ml
  • Honey or agave syrup - 2 tablespoons
  • Agar-agar powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - 1

Steps

  1. In a small saucepan, combine the coconut milk, honey or agave syrup, and a pinch of salt. Heat over medium heat until warm, but not boiling.
  2. Sprinkle the agar-agar powder over the warm mixture and whisk continuously until fully dissolved, about 2-3 minutes.
  3. Remove the saucepan from heat and add the raspberry puree and vanilla extract. Mix well until fully combined.
  4. Pour the mixture into two small ramekins or dessert cups. Allow to cool at room temperature for about 10 minutes.
  5. Once cooled, transfer the ramekins to the refrigerator and let them set for at least 20 minutes.
  6. Serve chilled, optionally garnished with fresh raspberries or a drizzle of honey.
