Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs, erythritol, coconut milk, vanilla extract, baking powder, and a pinch of salt until well combined.
  3. Fold in the unsweetened shredded coconut until evenly distributed.
