- Condensed milk - 200 ml
- Eggs - 2 large
- Desiccated coconut - 50 g
- Sugar - 100 g
- Cornstarch - 30 g
- Vanilla extract - 1 teaspoon
- Pinch of salt
Steps
- Preheat the oven to 180°C (350°F).
- In a blender, combine the coconut milk, condensed milk, eggs, sugar, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth.
- Add the desiccated coconut to the blender and pulse a few times to mix it in.
- Pour the mixture into a greased pudding mold or individual ramekins.
- Fill a baking dish with water and place the pudding mold inside, creating a water bath.
- Bake in the preheated oven for about 30-35 minutes or until the top is set and a toothpick inserted comes out clean.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
- To serve, carefully run a knife around the edges of the pudding, invert onto a plate, and garnish with additional desiccated coconut if desired.
