Ingredients

  • Coconut milk - 400 ml
  • Condensed milk - 200 ml
  • Eggs - 2 large
  • Desiccated coconut - 50 g
  • Sugar - 100 g
  • Cornstarch - 30 g
  • Vanilla extract - 1 teaspoon
  • Pinch of salt

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a blender, combine the coconut milk, condensed milk, eggs, sugar, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth.
  3. Add the desiccated coconut to the blender and pulse a few times to mix it in.
  4. Pour the mixture into a greased pudding mold or individual ramekins.
  5. Fill a baking dish with water and place the pudding mold inside, creating a water bath.
  6. Bake in the preheated oven for about 30-35 minutes or until the top is set and a toothpick inserted comes out clean.
  7. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  8. To serve, carefully run a knife around the edges of the pudding, invert onto a plate, and garnish with additional desiccated coconut if desired.
