Ingredients
- Whole milk - 200 ml
- Sweetened condensed milk - 100 g
- Cocoa powder - 30 g
- Cornstarch - 15 g
- Sugar - 50 g
- Eggs - 1 large
- Vanilla extract - 1 tsp
- Butter - 10 g (for greasing)
- Granulated sugar - 40 g (for caramel)
Steps
- Preheat the oven to 180°C (350°F).
- In a small saucepan, melt 40 g of granulated sugar over medium heat until it turns golden brown to make the caramel. Quickly pour the caramel into a round mold, tilting it to coat the bottom evenly. Set aside to harden.
- In another saucepan, combine the whole milk, sweetened condensed milk, cocoa powder, and sugar. Heat over medium heat, stirring until the sugar and cocoa powder are dissolved.
- In a bowl, whisk together the egg and cornstarch until smooth. Gradually add the warm chocolate mixture to the egg mixture, whisking continuously to prevent curdling.
- Pour the chocolate mixture back into the saucepan and cook over low heat, stirring constantly until it thickens (about 5-7 minutes). Add the vanilla extract and remove from heat.
- Pour the thickened chocolate mixture into the prepared caramel-coated mold.
- Cover the mold with aluminum foil and place it in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the mold to create a water bath.
- Bake in the preheated oven for about 40 minutes, or until set.
- Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or until completely chilled.
- To serve, carefully invert the pudim onto a plate, allowing the caramel to flow over the top.
