  • Raw cashews - 100 grams
  • Coconut milk - 200 ml
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Agar-agar powder - 1 teaspoon
  • Water - 100 ml
  • Pinch of salt - to taste

Steps

  1. Soak the raw cashews in water for at least 4 hours or overnight to soften them.
  2. Drain and rinse the cashews, then add them to a blender along with coconut milk, maple syrup, vanilla extract, and a pinch of salt.
  3. Blend until the mixture is smooth and creamy, scraping down the sides as necessary.
  4. In a small saucepan, combine the agar-agar powder and 100 ml of water, stirring to dissolve.
  5. Bring the mixture to a boil over medium heat, then reduce to a simmer for 2 minutes, stirring constantly.
  6. Pour the agar-agar mixture into the blender with the cashew mixture and blend again until fully incorporated.
  7. Pour the pudding mixture into two serving cups or ramekins.
  8. Refrigerate for at least 2 hours or until set.
  9. Serve chilled, optionally garnished with fresh fruit or a sprinkle of crushed nuts.
