Steps
- Soak the raw cashews in water for at least 4 hours or overnight to soften them.
- Drain and rinse the cashews, then add them to a blender along with coconut milk, maple syrup, vanilla extract, and a pinch of salt.
- Blend until the mixture is smooth and creamy, scraping down the sides as necessary.
- In a small saucepan, combine the agar-agar powder and 100 ml of water, stirring to dissolve.
- Bring the mixture to a boil over medium heat, then reduce to a simmer for 2 minutes, stirring constantly.
- Pour the agar-agar mixture into the blender with the cashew mixture and blend again until fully incorporated.
- Pour the pudding mixture into two serving cups or ramekins.
- Refrigerate for at least 2 hours or until set.
- Serve chilled, optionally garnished with fresh fruit or a sprinkle of crushed nuts.
