Ingredients
- Almond milk - 250 ml
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Cornstarch - 2 tablespoons
- Egg - 1 large
- Coconut oil - 1 teaspoon (for greasing)
- Pinch of salt
Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, combine the almond milk, honey, and vanilla extract over medium heat. Stir until the honey is dissolved.
- In a small bowl, mix the cornstarch with a little bit of cold almond milk to create a slurry, then gradually add it to the saucepan, stirring continuously until the mixture thickens.
- Remove the saucepan from heat and let it cool for a few minutes.
- In a separate bowl, whisk the egg and add a pinch of salt. Slowly incorporate the cooled milk mixture into the egg while whisking to avoid cooking the egg.
- Grease two small ramekins with coconut oil and pour the mixture evenly into them.
- Place the ramekins in a baking dish filled with water (bain-marie) and bake for about 20 minutes or until set.
- Remove from the oven and let them cool at room temperature before refrigerating for at least 2 hours.
- Serve chilled, optionally garnished with fresh fruit or a drizzle of honey.
