Ingredients

  • Blackberries - 200 grams
  • Coconut milk - 200 ml
  • Honey or maple syrup - 2 tablespoons
  • Agar-agar powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - 1
  • Water - 50 ml

Steps

  1. In a small saucepan, combine the water and agar-agar powder and let it sit for about 5 minutes.
  2. Add the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt to the saucepan and stir well.
  3. Bring the mixture to a gentle boil over medium heat, stirring constantly until the agar-agar is fully dissolved, which should take about 5 minutes.
  4. Remove the saucepan from the heat and let it cool slightly.
  5. In a blender, puree the blackberries until smooth. If desired, strain the puree to remove seeds.
  6. Combine the blackberry puree with the coconut mixture in a bowl and mix well.
  7. Pour the mixture into two small serving cups or ramekins.
  8. Refrigerate for at least 2 hours or until set.
  9. Serve chilled, optionally garnished with fresh blackberries.
