  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine peanut butter, coconut milk, honey (or maple syrup), eggs, vanilla extract, cornstarch, and a pinch of salt.
  3. Blend the mixture until smooth and well combined.
  4. Pour the mixture into a greased baking dish or individual ramekins.
  5. Place the baking dish in a larger baking pan filled with hot water (bain-marie) to ensure even cooking.
  6. Bake in the preheated oven for about 30-35 minutes, or until set.
  7. Remove from the oven and let it cool before refrigerating for at least 2 hours.
  8. Serve chilled, optionally garnished with crushed peanuts or a drizzle of honey.
