Steps
- In a small saucepan, combine the agar-agar with 100 ml of coconut milk and let it sit for 5 minutes.
- Heat the mixture over low heat, stirring until the agar-agar dissolves completely.
- In a blender, combine the remaining coconut milk, diced pineapple, honey, and vanilla extract. Blend until smooth.
- Add the dissolved agar-agar mixture to the blender and blend again for 1 minute to ensure everything is well combined.
- Pour the mixture into two individual serving cups or molds and refrigerate for at least 2 hours, or until set.
- Once set, carefully unmold the pudim by running a knife around the edges and inverting it onto a plate, or serve directly in the cups.
