Ingredients

  • Honey - 2 tablespoons
  • Agar-agar - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Coconut sugar - 1 tablespoon (optional, for added sweetness)

Steps

  1. In a small saucepan, combine the agar-agar with 100 ml of coconut milk and let it sit for 5 minutes.
  2. Heat the mixture over low heat, stirring until the agar-agar dissolves completely.
  3. In a blender, combine the remaining coconut milk, diced pineapple, honey, and vanilla extract. Blend until smooth.
  4. Add the dissolved agar-agar mixture to the blender and blend again for 1 minute to ensure everything is well combined.
  5. Pour the mixture into two individual serving cups or molds and refrigerate for at least 2 hours, or until set.
  6. Once set, carefully unmold the pudim by running a knife around the edges and inverting it onto a plate, or serve directly in the cups.
