Ingredients

  • Ripe avocado - 1 medium (about 200g)
  • Coconut milk - 120ml
  • Maple syrup - 3 tablespoons (45ml)
  • Vanilla extract - 1 teaspoon (5ml)
  • Chia seeds - 2 tablespoons (30g)
  • Lemon juice - 1 tablespoon (15ml)
  • Pinch of salt - 1

Steps

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender.
  2. Add the coconut milk, maple syrup, vanilla extract, chia seeds, lemon juice, and a pinch of salt to the blender.
  3. Blend all the ingredients on high speed until smooth and creamy, scraping down the sides as needed.
  4. Pour the mixture into small serving bowls or ramekins and refrigerate for at least 2 hours to allow it to set.
  5. Once set, serve chilled, optionally garnished with fresh fruit or nuts.
