Ingredients

  • Pork belly - 500 grams
  • Sea salt - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your grill or oven to 200°C (400°F).
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. In a small bowl, mix the sea salt, black pepper, garlic powder, and smoked paprika.
  4. Rub the spice mixture all over the pork belly, including into the scored skin.
  5. Drizzle olive oil and lime juice over the pork belly, ensuring even coverage.
  6. Place the pork belly skin-side up on the grill or in a roasting pan.
  7. Cook for about 60 minutes, or until the skin starts to bubble and crisp up.
  8. Reduce the temperature to 180°C (350°F) and continue cooking for an additional 30 minutes, or until the pork is tender.
  9. Remove from heat and let it rest for 10 minutes before slicing.
  10. Garnish with fresh parsley and serve.
