Ingredients

  • Cornmeal - 150 grams
  • Water - 750 ml
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Red bell pepper - 1 medium, chopped
  • Tomatoes - 2 medium, diced
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. In a pot, bring 750 ml of water to a boil, then slowly whisk in the cornmeal to avoid lumps.
  2. Reduce heat to low and cook the mixture, stirring frequently, for about 15-20 minutes until thickened.
  3. Once thickened, remove from heat and stir in a tablespoon of olive oil, then season with salt to taste. Cover and set aside.
  4. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  5. Add the chopped red bell pepper and continue to sauté for another 3-4 minutes until softened.
  6. Stir in the diced tomatoes, vegetable broth, cumin, paprika, black pepper, and salt. Bring to a simmer and cook for about 10 minutes until the sauce thickens.
  7. Serve the creamy polenta in bowls, topped generously with the sauce, and garnish with fresh parsley.
