- Cornmeal - 150 grams
- Water - 750 ml
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Red bell pepper - 1 medium, chopped
- Tomatoes - 2 medium, diced
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - for garnish
Steps
- In a pot, bring 750 ml of water to a boil, then slowly whisk in the cornmeal to avoid lumps.
- Reduce heat to low and cook the mixture, stirring frequently, for about 15-20 minutes until thickened.
- Once thickened, remove from heat and stir in a tablespoon of olive oil, then season with salt to taste. Cover and set aside.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the chopped red bell pepper and continue to sauté for another 3-4 minutes until softened.
- Stir in the diced tomatoes, vegetable broth, cumin, paprika, black pepper, and salt. Bring to a simmer and cook for about 10 minutes until the sauce thickens.
- Serve the creamy polenta in bowls, topped generously with the sauce, and garnish with fresh parsley.
