- Cornmeal - 100 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat and add the chopped onion. Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the minced garlic to the saucepan and sauté for an additional 1-2 minutes until fragrant.
- In a separate pot, bring 500 milliliters of water to a boil. Once boiling, slowly whisk in 100 grams of cornmeal, stirring continuously to avoid lumps.
- Reduce heat to low and continue to stir the cornmeal mixture for about 15-20 minutes until thickened and creamy.
- Season the polenta with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir well to combine.
- Remove from heat and fold in the sautéed onion and garlic mixture along with the chopped fresh parsley.
- Serve warm as a side dish to your favorite main course.
