Ingredients

  • Cornmeal - 100 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat and add the chopped onion. Sauté until the onion becomes translucent, about 3-4 minutes.
  2. Add the minced garlic to the saucepan and sauté for an additional 1-2 minutes until fragrant.
  3. In a separate pot, bring 500 milliliters of water to a boil. Once boiling, slowly whisk in 100 grams of cornmeal, stirring continuously to avoid lumps.
  4. Reduce heat to low and continue to stir the cornmeal mixture for about 15-20 minutes until thickened and creamy.
  5. Season the polenta with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir well to combine.
  6. Remove from heat and fold in the sautéed onion and garlic mixture along with the chopped fresh parsley.
  7. Serve warm as a side dish to your favorite main course.
