Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, sliced
  • Bell pepper (red or yellow) - 100 grams, sliced
  • Red onion - 50 grams, sliced
  • Eggplant - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Mozzarella cheese - 150 grams, shredded
  • Fresh basil leaves - 10 grams, for garnish
  • Salt - to taste
  • Black pepper - to taste
  • Oregano - 1 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, toss the sliced zucchini, bell pepper, red onion, and eggplant with 1 tablespoon of olive oil, salt, black pepper, and oregano.
  3. Grill the vegetables on a stovetop grill pan or outdoor grill for about 5-7 minutes until they are tender and have grill marks.
  4. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  5. Transfer the dough to a baking sheet lined with parchment paper.
  6. Brush the pizza base with the remaining tablespoon of olive oil.
  7. Spread the shredded mozzarella cheese evenly over the pizza base.
  8. Arrange the grilled vegetables and halved cherry tomatoes on top of the cheese.
  9. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  10. Remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves before slicing and serving.
