Ingredients

  • Almond flour - 120g
  • Mozzarella cheese (shredded) - 150g
  • Cream cheese - 50g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Fresh arugula - 50g
  • Parmesan cheese (shaved) - 30g
  • Cherry tomatoes - 100g
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Transfer the dough onto the prepared baking sheet and shape it into a pizza base (about 25 cm in diameter).
  4. Drizzle olive oil over the crust and bake for 12-15 minutes or until golden and firm.
  5. While the crust is baking, wash the arugula and cherry tomatoes. Halve the cherry tomatoes.
  6. Once the crust is done, remove it from the oven and let it cool slightly.
  7. Top the pizza with fresh arugula, shaved Parmesan, and halved cherry tomatoes.
  8. Season with black pepper to taste and serve immediately.
