- Cream cheese - 50g
- Egg - 1 large
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Olive oil - 1 tbsp
- Fresh arugula - 50g
- Parmesan cheese (shaved) - 30g
- Cherry tomatoes - 100g
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
- Transfer the dough onto the prepared baking sheet and shape it into a pizza base (about 25 cm in diameter).
- Drizzle olive oil over the crust and bake for 12-15 minutes or until golden and firm.
- While the crust is baking, wash the arugula and cherry tomatoes. Halve the cherry tomatoes.
- Once the crust is done, remove it from the oven and let it cool slightly.
- Top the pizza with fresh arugula, shaved Parmesan, and halved cherry tomatoes.
- Season with black pepper to taste and serve immediately.
