  • Black pepper - 1/4 teaspoon
  • Fresh arugula - 50 grams
  • Cashew nuts - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Water - 3 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Place the rolled dough on a pizza stone or baking sheet lined with parchment paper.
  4. In a mixing bowl, toss the cherry tomatoes with olive oil, salt, and black pepper.
  5. Spread the seasoned cherry tomatoes evenly over the pizza dough.
  6. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
  7. While the pizza is baking, prepare the cashew cheese by blending the cashew nuts, nutritional yeast, lemon juice, garlic powder, and water in a food processor until smooth.
  8. Once the pizza is done, remove it from the oven and let it cool slightly.
  9. Spread the cashew cheese over the pizza and top with fresh arugula.
  10. Slice and serve immediately, drizzling with extra olive oil if desired.
