Ingredients

  • Pizza dough - 200 grams
  • Queijo coalho cheese - 150 grams, sliced
  • Olive oil - 2 tablespoons
  • Fresh oregano - 1 teaspoon, chopped
  • Fresh basil - 1 teaspoon, chopped
  • Garlic - 1 clove, minced
  • Cherry tomatoes - 100 grams, halved
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface until it's about 0.5 cm thick and transfer it to a baking sheet or pizza stone.
  3. Brush the surface of the dough with 1 tablespoon of olive oil and sprinkle with minced garlic, salt, and black pepper.
  4. Evenly distribute the sliced queijo coalho cheese over the dough, followed by the halved cherry tomatoes.
  5. Sprinkle chopped fresh oregano and basil over the top.
  6. Drizzle the remaining tablespoon of olive oil on top of the pizza.
  7. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
