- Eggs - 2 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Barbecue sauce (sugar-free) - 100g
- Cooked shredded chicken - 150g
- Red onion - 1/2 medium, thinly sliced
- Bell pepper (red or yellow) - 1/2, thinly sliced
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1/2, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Gradually add the wet ingredients into the dry ingredients, mixing until a dough forms.
- Place a sheet of parchment paper on a baking tray and spread the dough into a round pizza shape, about 1/2 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.
- Remove the crust from the oven and spread the barbecue sauce evenly on top.
- Top the pizza with shredded chicken, sliced red onion, and bell pepper.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the vegetables are tender.
- Remove from the oven and garnish with fresh cilantro and avocado slices before serving.
