  • Coconut flour - 30g
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Barbecue sauce (sugar-free) - 100g
  • Cooked shredded chicken - 150g
  • Red onion - 1/2 medium, thinly sliced
  • Bell pepper (red or yellow) - 1/2, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1/2, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs and olive oil until well combined.
  4. Gradually add the wet ingredients into the dry ingredients, mixing until a dough forms.
  5. Place a sheet of parchment paper on a baking tray and spread the dough into a round pizza shape, about 1/2 cm thick.
  6. Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.
  7. Remove the crust from the oven and spread the barbecue sauce evenly on top.
  8. Top the pizza with shredded chicken, sliced red onion, and bell pepper.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the vegetables are tender.
  10. Remove from the oven and garnish with fresh cilantro and avocado slices before serving.
