  • Red bell pepper - 1/2, thinly sliced
  • Red onion - 1/2, thinly sliced
  • Fresh arugula - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Cashew nuts - 100 grams (soaked in water for 2 hours)
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper.
  4. In a blender, combine soaked cashew nuts, lemon juice, garlic, and a pinch of salt. Blend until smooth to create a creamy cashew sauce.
  5. Spread the cashew cream evenly over the pizza dough, leaving a small border around the edges.
  6. Evenly distribute the diced mango, sliced red bell pepper, and red onion over the cashew cream.
  7. Sprinkle nutritional yeast over the toppings for a cheesy flavor, then drizzle with olive oil and season with salt and black pepper.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the vegetables are tender.
  9. Remove from the oven and top with fresh arugula before slicing and serving.
