Ingredients

  • Pizza dough - 200 grams
  • Jiló (bitter gourd) - 2 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Tomato - 1 medium, diced
  • Nutritional yeast - 3 tablespoons
  • Cashews - 50 grams, soaked for 4 hours
  • Lemon juice - 1 tablespoon
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the sliced jiló and cook for about 5 minutes until slightly softened, then add the red bell pepper and onion; sauté for another 5 minutes.
  4. Stir in the diced tomato and season with salt and black pepper. Cook for an additional 3-4 minutes, then remove from heat.
  5. In a blender, combine soaked cashews, nutritional yeast, lemon juice, and a pinch of salt. Blend until smooth and creamy, adding a little water if necessary to achieve a spreadable consistency.
  6. Roll out the pizza dough on a floured surface to fit your baking tray.
  7. Transfer the dough to the baking tray and spread the cashew cheese evenly on top.
  8. Layer the sautéed vegetables over the cashew cheese, spreading them out evenly.
  9. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before slicing and serving.
