- Jiló (bitter gourd) - 2 medium, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, sliced
- Red onion - 1 small, thinly sliced
- Tomato - 1 medium, diced
- Nutritional yeast - 3 tablespoons
- Cashews - 50 grams, soaked for 4 hours
- Lemon juice - 1 tablespoon
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the garlic until fragrant.
- Add the sliced jiló and cook for about 5 minutes until slightly softened, then add the red bell pepper and onion; sauté for another 5 minutes.
- Stir in the diced tomato and season with salt and black pepper. Cook for an additional 3-4 minutes, then remove from heat.
- In a blender, combine soaked cashews, nutritional yeast, lemon juice, and a pinch of salt. Blend until smooth and creamy, adding a little water if necessary to achieve a spreadable consistency.
- Roll out the pizza dough on a floured surface to fit your baking tray.
- Transfer the dough to the baking tray and spread the cashew cheese evenly on top.
- Layer the sautéed vegetables over the cashew cheese, spreading them out evenly.
- Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before slicing and serving.
