Ingredients

  • Whole wheat flour - 150 grams
  • Chickpea flour - 50 grams
  • Baking powder - 5 grams
  • Salt - 3 grams
  • Greek yogurt - 150 grams
  • Olive oil - 15 ml
  • Gorgonzola cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Fresh spinach - 50 grams
  • Cherry tomatoes - 100 grams, halved
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine the whole wheat flour, chickpea flour, baking powder, and salt.
  3. Add the Greek yogurt and olive oil to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes, until smooth.
  5. Roll out the dough into a circular shape, about 1 cm thick, and transfer it to a baking sheet lined with parchment paper.
  6. Spread the crumbled Gorgonzola cheese evenly over the dough, followed by the shredded mozzarella cheese.
  7. Arrange the fresh spinach and halved cherry tomatoes on top of the cheese.
  8. Season with black pepper to taste.
  9. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven, let it cool for a couple of minutes, and garnish with fresh basil leaves before slicing.
