- Greek yogurt - 150 grams
- Olive oil - 15 ml
- Gorgonzola cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Fresh spinach - 50 grams
- Cherry tomatoes - 100 grams, halved
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine the whole wheat flour, chickpea flour, baking powder, and salt.
- Add the Greek yogurt and olive oil to the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, until smooth.
- Roll out the dough into a circular shape, about 1 cm thick, and transfer it to a baking sheet lined with parchment paper.
- Spread the crumbled Gorgonzola cheese evenly over the dough, followed by the shredded mozzarella cheese.
- Arrange the fresh spinach and halved cherry tomatoes on top of the cheese.
- Season with black pepper to taste.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven, let it cool for a couple of minutes, and garnish with fresh basil leaves before slicing.
