- Young green jackfruit in brine - 1 can (400 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Bell pepper - 1 medium, sliced
- Tomato - 1 medium, diced
- Spinach - 100 grams, fresh
- Nutritional yeast - 2 tablespoons
- Tomato sauce - 150 grams
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegan cheese (optional) - 100 grams
Steps
- Preheat your oven to 220°C (428°F).
- Drain and rinse the jackfruit. Cut it into smaller pieces, then use your fingers to shred it to resemble pulled chicken.
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until the onion is translucent.
- Add the shredded jackfruit to the skillet, along with sliced bell pepper, diced tomato, and spinach. Season with dried oregano, salt, and black pepper. Cook for about 10 minutes, stirring occasionally, until the vegetables are tender.
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Spread the tomato sauce evenly over the pizza dough.
- Top the pizza with the jackfruit and vegetable mixture, and sprinkle nutritional yeast and vegan cheese (if using) on top.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the toppings are heated through.
