  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooked chicken breast - 200 grams, shredded
  • Curry powder - 1 tablespoon
  • Coconut milk - 100 ml
  • Bell pepper - 1/2, diced
  • Onion - 1/2, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. To prepare the cauliflower crust, steam the cauliflower florets until tender, about 8-10 minutes. Allow to cool slightly.
  3. Once cooled, use a kitchen towel to squeeze out excess moisture from the cauliflower.
  4. In a bowl, mix the cauliflower, mozzarella cheese, Parmesan cheese, egg, salt, and black pepper until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza shape. Bake in the preheated oven for 15-20 minutes until golden brown.
  6. While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  7. Add the diced bell pepper and shredded chicken to the pan, followed by the curry powder and coconut milk. Stir well and let simmer for 5-7 minutes until heated through.
  8. Remove the crust from the oven and top with the chicken curry mixture evenly.
  9. Return the pizza to the oven and bake for an additional 10 minutes.
  10. Garnish with fresh cilantro before serving.
