Steps
- Preheat the oven to 220°C (425°F).
- To prepare the cauliflower crust, steam the cauliflower florets until tender, about 8-10 minutes. Allow to cool slightly.
- Once cooled, use a kitchen towel to squeeze out excess moisture from the cauliflower.
- In a bowl, mix the cauliflower, mozzarella cheese, Parmesan cheese, egg, salt, and black pepper until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza shape. Bake in the preheated oven for 15-20 minutes until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced bell pepper and shredded chicken to the pan, followed by the curry powder and coconut milk. Stir well and let simmer for 5-7 minutes until heated through.
- Remove the crust from the oven and top with the chicken curry mixture evenly.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Garnish with fresh cilantro before serving.
