Ingredients

  • Pizza dough - 1 base (about 250g)
  • Fresh spinach - 200g
  • Firm tofu - 150g, crumbled
  • Nutritional yeast - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oregano - 1 teaspoon
  • Cherry tomatoes - 100g, halved
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
  4. In a bowl, combine the crumbled tofu, nutritional yeast, cooked spinach, lemon juice, salt, black pepper, and oregano. Mix well to create a creamy filling.
  5. Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet or pizza stone.
  6. Spread the spinach-tofu mixture evenly over the pizza base.
  7. Top with halved cherry tomatoes and drizzle with the remaining tablespoon of olive oil.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before slicing and serving.
