- Fresh spinach - 200g
- Firm tofu - 150g, crumbled
- Nutritional yeast - 2 tablespoons
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oregano - 1 teaspoon
- Cherry tomatoes - 100g, halved
- Fresh basil - a handful, for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
- In a bowl, combine the crumbled tofu, nutritional yeast, cooked spinach, lemon juice, salt, black pepper, and oregano. Mix well to create a creamy filling.
- Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet or pizza stone.
- Spread the spinach-tofu mixture evenly over the pizza base.
- Top with halved cherry tomatoes and drizzle with the remaining tablespoon of olive oil.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before slicing and serving.
