  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1, sliced
  • Red onion - 1 small, sliced
  • Fresh basil - a handful, chopped
  • Black olives - 50 grams, sliced

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a blender or food processor, combine the soaked cashew nuts, nutritional yeast, lemon juice, garlic powder, and salt. Blend until smooth and creamy, adding a little water if necessary to achieve a spreadable consistency.
  3. Roll out the pizza dough on a floured surface to your desired thickness and shape. Place it on a baking sheet lined with parchment paper.
  4. Spread the cashew cheese evenly over the pizza dough.
  5. Top the pizza with halved cherry tomatoes, sliced red bell pepper, sliced red onion, and black olives.
  6. Drizzle the olive oil over the toppings and sprinkle with chopped basil.
  7. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the vegetables are tender.
  8. Remove from the oven, let it cool for a couple of minutes, slice, and serve warm.
