  • Water - 50 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Vegan cheese - 100 grams
  • Red onion - 50 grams, thinly sliced
  • Bell pepper - 50 grams, thinly sliced
  • Spinach - 50 grams
  • Oregano - 1 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Peel and cube the sweet potato, then boil in salted water for about 15 minutes until tender.
  3. Drain the sweet potato and mash it in a bowl until smooth. Add olive oil, flour, water, salt, and black pepper, and mix until a dough forms.
  4. On a floured surface, roll out the dough into a round shape about 1/2 cm thick.
  5. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  6. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  7. Sprinkle the vegan cheese over the sauce, followed by the sliced red onion, bell pepper, and spinach.
  8. Sprinkle oregano over the top and drizzle a little olive oil if desired.
  9. Bake in the preheated oven for 20-25 minutes or until the crust is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, slice, and serve.
