- Tomato - 1, diced
- Black olives - 50 grams, sliced
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oregano - 1 teaspoon
- Nutritional yeast - 2 tablespoons
Steps
- Peel and dice the potatoes, then boil them in salted water for about 15-20 minutes until tender.
- Drain the potatoes and mash them in a bowl, adding 1 tablespoon of olive oil, salt, and black pepper to taste.
- Spread the mashed potatoes evenly on a baking tray lined with parchment paper to form a pizza crust shape, about 1 cm thick.
- Preheat the oven to 200°C (392°F) and bake the potato crust for 15 minutes until it starts to turn golden.
- While the crust is baking, heat the remaining tablespoon of olive oil in a pan over medium heat and sauté the onion and garlic until translucent.
- Add the diced red bell pepper and tomato to the pan, cooking for another 5-7 minutes until softened.
- Stir in the sliced black olives, chopped basil, oregano, and nutritional yeast, mixing well to combine and heat through.
- Remove the potato crust from the oven and spread the vegetable mixture evenly over the top.
- Return the pizza to the oven and bake for another 10-15 minutes until everything is heated through and the edges are crispy.
- Slice and serve warm, garnished with additional fresh basil if desired.
