Ingredients

  • Potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Onion - 1, diced
  • Tomato - 1, diced
  • Black olives - 50 grams, sliced
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Nutritional yeast - 2 tablespoons

Steps

  1. Peel and dice the potatoes, then boil them in salted water for about 15-20 minutes until tender.
  2. Drain the potatoes and mash them in a bowl, adding 1 tablespoon of olive oil, salt, and black pepper to taste.
  3. Spread the mashed potatoes evenly on a baking tray lined with parchment paper to form a pizza crust shape, about 1 cm thick.
  4. Preheat the oven to 200°C (392°F) and bake the potato crust for 15 minutes until it starts to turn golden.
  5. While the crust is baking, heat the remaining tablespoon of olive oil in a pan over medium heat and sauté the onion and garlic until translucent.
  6. Add the diced red bell pepper and tomato to the pan, cooking for another 5-7 minutes until softened.
  7. Stir in the sliced black olives, chopped basil, oregano, and nutritional yeast, mixing well to combine and heat through.
  8. Remove the potato crust from the oven and spread the vegetable mixture evenly over the top.
  9. Return the pizza to the oven and bake for another 10-15 minutes until everything is heated through and the edges are crispy.
  10. Slice and serve warm, garnished with additional fresh basil if desired.
