Ingredients

  • Pizza dough - 250 grams
  • Zucchini - 200 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Fresh basil - 10 grams, chopped
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the pizza dough on a floured surface to fit a 30 cm pizza stone or baking tray.
  3. Transfer the rolled-out dough to the pizza stone or baking tray.
  4. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the sliced zucchini and red onion to the skillet, season with salt and black pepper, and cook for another 5 minutes until slightly softened.
  6. Spread the sautéed zucchini and onion mixture evenly over the pizza dough.
  7. Top with halved cherry tomatoes and sprinkle with nutritional yeast and chopped basil.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, let cool for a few minutes, then slice and serve.
