- Pizza dough - 200 grams
- Pumpkin (cubed) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Onion (sliced) - 1 medium
- Bell pepper (sliced) - 1/2 medium
- Spinach (fresh) - 50 grams
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- Boil the pumpkin cubes in salted water for about 10 minutes until tender, then drain and mash with a fork.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the garlic and onion until translucent.
- Add the sliced bell pepper and continue to sauté for another 5 minutes until softened.
- Stir in the fresh spinach and cook until wilted, then remove from heat and season with salt, black pepper, and oregano.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet lined with parchment paper.
- Spread the mashed pumpkin evenly over the dough as a base.
- Top the pumpkin layer with the sautéed vegetable mixture and sprinkle nutritional yeast over the top.
- If using, scatter vegan cheese over the pizza.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the base is cooked through.
- Remove from the oven, let cool for a few minutes, slice, and serve.
