Ingredients

  • Pizza dough - 200 grams
  • Pumpkin (cubed) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Onion (sliced) - 1 medium
  • Bell pepper (sliced) - 1/2 medium
  • Spinach (fresh) - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Boil the pumpkin cubes in salted water for about 10 minutes until tender, then drain and mash with a fork.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the garlic and onion until translucent.
  4. Add the sliced bell pepper and continue to sauté for another 5 minutes until softened.
  5. Stir in the fresh spinach and cook until wilted, then remove from heat and season with salt, black pepper, and oregano.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet lined with parchment paper.
  7. Spread the mashed pumpkin evenly over the dough as a base.
  8. Top the pumpkin layer with the sautéed vegetable mixture and sprinkle nutritional yeast over the top.
  9. If using, scatter vegan cheese over the pizza.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the base is cooked through.
  11. Remove from the oven, let cool for a few minutes, slice, and serve.
