  • Cassava flour (polvilho doce) - 100 g
  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, chopped
  • Tomato - 1 medium, chopped
  • Nutritional yeast - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the chopped bell pepper and tomato to the pot, cooking until softened, about 5 minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Slowly whisk in the cassava flour, stirring continuously to avoid lumps, until the mixture thickens.
  5. Stir in the coconut milk and nutritional yeast, and continue to cook for another 5 minutes until creamy.
  6. Season with salt and black pepper to taste.
