Ingredients

  • Popcorn kernels - 100 grams
  • Coconut oil - 2 tablespoons
  • Brown sugar - 100 grams
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Water - 2 tablespoons

Steps

  1. In a large pot, heat the coconut oil over medium heat. Add the popcorn kernels and cover the pot.
  2. Shake the pot occasionally until the popping slows down. Once popped, remove from heat and set aside.
  3. In a small saucepan over medium heat, combine the brown sugar, maple syrup, water, and salt. Stir continuously until the mixture starts to bubble.
  4. Allow the caramel to cook for about 2-3 minutes without stirring until it thickens slightly.
  5. Remove the saucepan from heat and quickly stir in the vanilla extract.
  6. Pour the caramel sauce over the popped popcorn and quickly toss to coat evenly.
  7. Spread the caramel-coated popcorn onto a baking sheet lined with parchment paper and let it cool for a few minutes before serving.
