Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large pot, heat the coconut oil over medium heat. Add the popcorn kernels and cover with a lid.
- Shake the pot occasionally until the popping slows down, then remove from heat. Transfer the popped popcorn to a large mixing bowl.
- In a saucepan, combine brown sugar, maple syrup, and sea salt over medium heat. Stir continuously until the mixture begins to boil.
- Once boiling, let it cook for 2-3 minutes without stirring, then remove from heat and quickly stir in the vanilla extract and baking soda until well combined.
- Pour the caramel mixture over the popcorn and gently stir to coat all kernels evenly.
- Spread the caramel-coated popcorn onto the prepared baking sheet and bake in the oven for 10-15 minutes, stirring once halfway through.
- Remove from the oven and let cool completely before breaking into clusters. Serve and enjoy!
