- Red bell pepper - 2 large
- Quinoa - 100 grams
- Black beans (cooked) - 150 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Corn (canned or frozen) - 100 grams
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Cheese (optional, for topping) - 50 grams, grated
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the quinoa under cold water and cook it in a pot with 200 ml of water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the water is absorbed.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- Add the diced tomato, cooked black beans, corn, cumin, paprika, salt, and black pepper to the skillet. Stir well and cook for another 5 minutes until heated through.
- Once the quinoa is cooked, fluff it with a fork and combine it with the vegetable mixture. Stir in the chopped cilantro and lime juice.
- Cut the tops off the bell peppers and remove the seeds. Stuff each pepper generously with the quinoa and bean mixture.
- Place the stuffed peppers upright in a baking dish, and if desired, sprinkle grated cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Remove from the oven and let cool for a few minutes before serving.
