- Picanha (top sirloin cap) - 500 grams
- Unsalted butter - 100 grams
- Garlic - 4 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Trim any excess fat from the picanha, leaving about 1 cm for flavor.
- Rub the picanha with olive oil, salt, and black pepper on all sides.
- In a skillet over medium heat, melt 50 grams of butter and add the minced garlic. Sauté until fragrant, about 1-2 minutes.
- Remove the skillet from heat and stir in the chopped parsley.
- Place the picanha on a baking tray, fat side up, and pour the garlic butter mixture over it.
- Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 54°C (130°F) for medium-rare.
- Remove the picanha from the oven and let it rest for 10 minutes before slicing.
- While resting, melt the remaining 50 grams of butter in a small saucepan over low heat.
- Slice the picanha and drizzle the melted butter over the top before serving.
