Ingredients

  • Picanha (top sirloin cap) - 500 grams
  • Unsalted butter - 100 grams
  • Garlic - 4 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Trim any excess fat from the picanha, leaving about 1 cm for flavor.
  3. Rub the picanha with olive oil, salt, and black pepper on all sides.
  4. In a skillet over medium heat, melt 50 grams of butter and add the minced garlic. Sauté until fragrant, about 1-2 minutes.
  5. Remove the skillet from heat and stir in the chopped parsley.
  6. Place the picanha on a baking tray, fat side up, and pour the garlic butter mixture over it.
  7. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 54°C (130°F) for medium-rare.
  8. Remove the picanha from the oven and let it rest for 10 minutes before slicing.
  9. While resting, melt the remaining 50 grams of butter in a small saucepan over low heat.
  10. Slice the picanha and drizzle the melted butter over the top before serving.
