  • Coarse salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 sprig, chopped
  • Lemon juice - 1 tablespoon
  • Potatoes - 300 grams, cut into wedges
  • Chimichurri sauce - for serving

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix minced garlic, olive oil, coarse salt, black pepper, chopped rosemary, and lemon juice to create a marinade.
  3. Rub the marinade all over the picanha, ensuring it is well coated, and let it marinate for at least 20 minutes.
  4. While the meat is marinating, prepare the potatoes by tossing them in olive oil, salt, and pepper.
  5. Place the marinated picanha on a baking tray along with the seasoned potato wedges.
  6. Bake in the preheated oven for about 30-35 minutes or until the picanha reaches your desired level of doneness (medium-rare is approximately 55-60°C or 130-140°F internal temperature).
  7. Once done, remove from the oven and let it rest for 10 minutes before slicing.
  8. Serve the sliced picanha with the roasted potato wedges and a side of chimichurri sauce.
