Ingredients

  • Picanha beef - 500 grams
  • Garlic - 5 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Lemon juice - 2 tablespoons

Steps

  1. In a bowl, combine minced garlic, olive oil, chopped parsley, salt, black pepper, and lemon juice to create a marinade.
  2. Cut the picanha into two equal portions and score the fat cap in a crosshatch pattern, being careful not to cut into the meat.
  3. Rub the marinade generously over the picanha, ensuring it gets into the scored fat. Allow it to marinate for at least 20 minutes at room temperature.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Place the marinated picanha on the grill, fat side down, and cook for about 5-7 minutes to render the fat and develop a nice crust.
  6. Flip the picanha and cook for an additional 5-7 minutes for medium-rare, or until it reaches your desired doneness.
  7. Remove from the grill and let the meat rest for 5 minutes before slicing against the grain.
  8. Serve with a sprinkle of fresh parsley and enjoy!
