Ingredients

  • Pork leg (bone-in) - 1 kg
  • Garlic cloves (minced) - 6
  • Fresh oregano (chopped) - 2 tablespoons
  • Lemon juice - 60 ml
  • Olive oil - 30 ml
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Bay leaves - 2
  • Water - 500 ml

Steps

  1. In a large bowl, combine minced garlic, fresh oregano, lemon juice, olive oil, paprika, cumin, salt, and black pepper to create a marinade.
  2. Rub the marinade all over the pork leg, ensuring it’s well-coated. Cover and refrigerate for at least 4 hours or overnight for best results.
  3. Preheat your oven to 160°C (320°F). Place the marinated pork leg in a roasting pan and add bay leaves and water.
  4. Cover the pan with aluminum foil and roast for about 4 hours, basting occasionally with the cooking juices.
  5. Remove the foil in the last 30 minutes of cooking to allow the pork to brown and crisp up on the outside.
  6. Once cooked, remove from the oven and let it rest for 15 minutes before slicing and serving.
