- Pork leg (bone-in) - 1 kg
- Garlic cloves (minced) - 6
- Fresh oregano (chopped) - 2 tablespoons
- Lemon juice - 60 ml
- Olive oil - 30 ml
- Paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 tablespoon
- Black pepper - 1 teaspoon
- Bay leaves - 2
- Water - 500 ml
Steps
- In a large bowl, combine minced garlic, fresh oregano, lemon juice, olive oil, paprika, cumin, salt, and black pepper to create a marinade.
- Rub the marinade all over the pork leg, ensuring it’s well-coated. Cover and refrigerate for at least 4 hours or overnight for best results.
- Preheat your oven to 160°C (320°F). Place the marinated pork leg in a roasting pan and add bay leaves and water.
- Cover the pan with aluminum foil and roast for about 4 hours, basting occasionally with the cooking juices.
- Remove the foil in the last 30 minutes of cooking to allow the pork to brown and crisp up on the outside.
- Once cooked, remove from the oven and let it rest for 15 minutes before slicing and serving.
